Best Cupcakes

Birthday season in the Playroom is coming to an end.
Plenty of cupcakes have been baked and eaten.
We always use the same recipe.
It's tried and true and yummy.

Very Good Cupcakes

125g butter, softened
2/3c ( 150g) caster sugar
2 tspns vanilla essence
2 eggs, at room temperature
1.5c SR flour
1/2c milk

preheat oven to 180C
makes 12 x 1/3c cupcakes

Cream butter, sugar and vanilla
add eggs one at a time, beating well after each addition, until combined.
Use a large metal spoon to fold in flour and milk, separately, in two batches until well combined.
Spoon into lined muffin pin, fill each about 2/3s full  and bake for 15 mins or until cooked when tested with a skewer.
Leave to cool completely and then ice and decorate.
